By 2050, humans will experience a giant food gap, while nearly 30% of food produced in the US ends up in landfills. Two opportunities: demand for alternative protein sources and the need for a viable solution to food waste. Two solutions: protein-based ingredients like insect flour powered by food waste, and a new public perception of gourmet insects. Experiential culinary adventures can help!
 

ABOUT GOGGY

Goggy’s broad area of interest is in ecological and evolutionary physiology: how organisms adjust growth and development in response to environmental change. He uses a diverse set of tools and conceptual frameworks to integrate the fields of physiology, ecology, behavior and evolutionary biology. Goggy is also the founder and owner of HexaFeast LLC, a UA startup developing technologies for the edible insect market with a special focus on repurposing food waste for circular economies using insects.
